Isirabo Anaerobic Natural Red Bourbon

This one is great for filter, high impact with very vibrant boozy, tropical vibes exaggerated by a period of fermentation in sealed containers, followed by drying the seeds in the fruit on raised beds. Jean Luc Rwamasirabo's team at Jerika  have been experimenting with anaerobic fermentation as a way to differentiate the cup profile from that of their washed and natural coffees and increase the value per kilo of their coffee. They are clearly doing something right here, and have managed to do so at an impressive scale. They are now able to produce several hundred bags of this coffee a year!! 

 Jerika are based in Kigali, and operates in the districts of Gikumbi and Gatsibo. Here, the Red Bourbon cherry is collected from close to 2000 farmers, with some farms up to 2150 meters above sea level. This altitude provides relatively cool climatic conditions, which combined with the area's rich soils and the team's extensive knowledge of agronomy and agricultural management yield some fantastic results.
