Let’s talk about organic certification. It costs money. it involves paperwork. Box ticking. Jumping through hoops. And more money. When you put all of that aside, you sometimes find beautiful coffees like this one. The community in La Mazateca cultivate traditional varieties (Typica, Bourbon and Mundo Novo) under forest cover, using organic prectices. They do it the old way, without chemical fungicides, fertilisers or pesticides. Every problem is solved hand in hand with nature. And nobody cares about bureaucracy. We certainly don’t.
